Fort Lauderdale’s newest brewery resembles a hunting lodge, its taproom walls decorated with taxidermy alligators, boars and swordfish. Blame the mounted animals on former biologist and head brewer Phil Gillis, who with his three partners aims to raise awareness about South Florida’s ecology. So far, we’re fond of Bleubird Saison (named after the Fort Lauderdale rapper) and Phil’s Pilsner. (Check out our guide to South Florida’s breweries.)
