New cocktails on the menu at Pistache French Bistro in West Palm Beach

This 7-year-old Parisian bistro overlooking downtown’s park and Intracoastal Waterway has introduced more than a dozen specialties and cocktails after earning the exclusive Five Star Diamond Award this winter — only the third in Palm Beach County.

Start off with golden beet salad with clementines, citrus whipped ricotta and pistachio pesto ($13).

“We always have one dish with pistachios because we’re Pistache,” Chef du Cuisine Isaac Cerny says. “The earthiness of the beets goes really well with the toasted flavor.”

Other new favorites are gnocchi Parisienne with tomato-lamb merguez ragout and feta, crowned with cucumber mint salad tucked in clams ($15). Cerny wanted to design a dish around spaghetti squash, so he paired it with jumbo sea scallops, Brussels sprouts, parsnips and sherry bacon jus ($36).

The Blood Orange Manhattan ($14) is a front-runner among new five cocktails, with most using French liqueurs, such as the Lemon Collins with gin and St. Germain ($12).

Paneterie, their sibling bakery around the corner, is now supplying plates of assorted macarons ($8).
